		<description>Here is a little history of the &#039;Hungarians&#039; as told to me over and over by my mother when I was small. It may explain some of the quirks of foods they enjoy, and also why they seem to be Quite the independant group.
     In the 4th century B.C. the Hungarian Hordes emerged West from east of the Ural Mtns led by Attila the Hun, direct decendant of Gengus Khan. They settled in an area just to the east of the U-shaped Carpathian Mtn chain. As such they settled and did not mix very readily with other nationalities. This went on for centuries, and the &#039;Magyars&#039; almost became a &#039;sub-race&#039; with special characteristics of face and language. As an example, if one listens to the Finnih language being spoken, one will falter and try to understand it with no success, thinking it to be Hungarian. A quirk of accents? Also, a few words are common to both Magyarol (the language) and Turkish. Yet they have no other commonnality. St Stephen (the Catholic proto-martyr) is the patron saint of Hungary. The majority of religion is of a Judeo-Christian background.
     Getting back to geographical background which affects the whole psyche, the Austro-Hungarian Empire as it was known until 1917 encompassed all of modern Checkloslovakia, parts of Germany and parts of Poland on the North; while dipping into the the northern parts of Romania (Transilvania) and Yugoslavia. Thus, the food evolved into tastes quite unique.
     There existed ranches, land bound and very cold in the winter, lending its way to winter vegetables like cabbage and squash, carrots, and  peppers. The heaviness of sourcream in many dishes brought stamina. Grains like barley, oats, flour prevailed. A very interesting combination to say the least. Just like parts of North America, ranches were prominent in raising beef, pork, chicken, and geese. One pot meals like paprikash, goulash, etc. were popular. Heavy sweets were common even in the summer, such as apricot, marzipan (almond paste). Nuts provided natural oils, and hardwood trees like walnuts thrived.
     Then there was the wild game, just like in America, but specializing in the European Red Stag. Extremely good and hearty eating. So there you have the Magyar background, strung together by neccesity.</description>
