Vanillekipferl are traditional Austrian cookies made with either almonds or hazelnuts.

Vanillekipferl are small crescent shaped sugar cookies that originated from Austria. They are most often prepared around Christmas but can be enjoyed anytime of the year.

Ingredients

2/3 cup (150 grams) unsalted butter, cold
3/4 cup (210 grams) all-purpose unbleached flour
1/2 cup (80 grams) ground hazelnuts or ground almonds
1/3 cup (80 grams) confectioner’s sugar plus extra for sprinkling
1 egg, large

Directions

Preheat oven to 400F° (200 C°). Line a baking sheet with parchment paper.

Add the flour into a large bowl.

Cut the cold butter into small pieces and mix into flour. Add confectioner’s sugar, ground almonds or hazelnuts and the egg.

Rinse hands with cold water and quickly knead mixture into a round ball. Refrigerate for half an hour.

Cut dough into 1 cm wide pieces, roll and form crescents.

Bake for 10-15 minutes, or until light brown in color.

Sprinkle confectioner’s or vanilla sugar on crescents while still hot.
